Fruit Yogurt Salad

The fruit yogurt salad is something we learnt from TFB's auntie.. It is really easy to put together and really tasty too.

Good for desserts after a heavy meal or during hot days....

Ingredients:
2 huge mangos
3 normal size oranges
3 normal size apples
4 - 5 small sweet pears
2 bottle of marigold non fat yogurt (peach and mango flavour)

Method:
Dice everything up and pour into a big bowl (pour the mango in as the last fruit on top)
Pour the yogurt in and mix
Chill and enjoy your dessert!

Honey Walnut Muffin

Found the recipe at My Baking Diary last year, tried making it and I love it! Love everything with honey and these muffins got a really pleasant honey taste and smell.

Remember to toast the walnut for that extra kick!

Ingredients:
140g self raising flour
1/8 tsp baking soda
salt
140g butter
40g castor sugar
3 tbs honey
3 eggs
1tsp vanilla essence
40g walnuts

Method:
1. Preheat oven to 1810 deg C about 15 minutes. Grease muffin tins
2. Sieve self raising flour with baking soda and salt
3. Beat butter until soft. Mix in sugar and beat until creamy. Add honey and beaten eggs. Mix well
4. Add vanilla essence and sieved flour. Mix in walnuts
5. Pour batter into muffin tins
6. Bake for about 18 - 20 minutes until golden brown and done.
Set aisde on the rack to let cool.
