Sorbet Cake

Was supposed to do a cake for TFB for his birthday in Oct, so this post is about one mth late...

Due to the milk problem... I decide against baking a cake in case we used any harmful product for the cake..... so i think and think and think and thot of sorbet cake... thinking that the idea should be quite funny plus shouldnt be possible, i googled and i really found a receipe for sorbet cake!....

Followed the receipe and came up with the following cake... We used one tub of mango sorbet + one tub of lime sorbet for the cake..

We used fresh blueberries + blueberries jam for the topping and used blueberries jam plus almond for the middle layer...


The result is a extremely refreshing and quite sour cake which taste nice and is a good change from the heavy meal that we just had...

Prep Time: 15 Minutes

Ingredients:
- 1/2 cup finely chopped walnuts
- 1/4 cup plus 2 tablespppons blueberry preserves or jam, divided
- 1 pint orange sorbet, slightly softened (in my case I used mango sorbet)
- 1 pint lemon sorbet or other cirtrus sorbet, slightly softened
- 1 cup fresh blueberries

Preparation:
Line the bottom of sides of a 8 X 4 inch loaf pan with a double layer of waxed paper, folding the paper to fit smoothly.

In a small bowl, stir together walnuts and 1/4 cup of the blueberry preserves, set aside. Spoon orange sorbet into the lined pan, smoothing the top to make an event layer. Spread the reserved walnut preserves mixture evenly over the orange sorbet. Spoon the lemon sorbet evenly over the preserves and smooth the top. Cover tightly with aluminum foil. Freeze several hours or overnight.

Just before serving, in a medium bowl, stir remaining 2 tablesppon preserves until smooth. Fold in fresh blueberries. Invert the cake into a chilled serving plate. Remove the pan and waxed paper. Sppon about one-fourth of the blueberry mixture down the center of the cake. Cut the cake into 8 (1-inch) slices

Serve on chilled dessert plates. Top each slice with a spoonful of the remaining fresh berry mixture. Serve immediately and enjoy!

Strawberry Yogurt Cake

Strawberry Yogurt Cake with recipe obtained from Happy Home Baking

Is indeed a very interesting cake and i made two cake in two day because for the first cake which you are able to see.. Lazy me refuses to get my butt down to get any olive oil or butter.. and i used peanut oil.. so the cake got a very weird taste but look very pretty..

The second cake which i will not show is tasty (it taste a bit like ice cream) because i changed the recipe a bit by adding a bit of mashed strawberry into the cake mixture but as i used butter or because i added the mashed strawberry.. the texture did not come out that well.. it is not as fluffy.. so oh well.. need to experiement more to get the correct taste, texture and look.. haha




Tiramisu

Made this Tiramisu together with TFB for his mum's birthday..
A bit too wet.. but is really yummy.. heh heh heh..

Prep time: 15 minute

Serve 6 person

Ingredient:
- 3 egg yolks
- 50g white sugar
- 10ml vanilla extract
- 250g mascarpone cheese
- 24 ladyfingers
355ml brewed coffee (getting super thick coffee makes the tiramisu very flavourful)
- 5g unsweetened cocoa powder

In a medium bowl, beat yolks with sugar and vanilla until smooth and light yellow. Fold mascarpone into yolk mixture. Set aside.

Dip ladyfingers briefly in coffee and arrange 12 of them in the bottom of an 8X8 inch dish. Spread half the mascarpone mixture over the ladyfingers. Repeat with remaining cookies and mascarpone. Cover and chill 1 hour. Spinkle with cocoa just before serving.

Steam Bake Hazelnut cheesecake

Went to phoon huat baking demo class the other day with Ma Ling Shu... The teacher demo a steam bake hazelnut cheesecake...




Having some itchy fingers after that at home... TFB and i went to phoon huat to purchase all the ingredient we need for this cake and embark on our baking journey!




This is the one that is made by me and TFB... ^_^

Picnic food

Had a picnic with TFB in late Aug... and here are the food that we have prepared:


There are scones, chocolate tarts, salad with mushroom as well as mushroom with tuna covered with cheese.

Brought two batch of strawberries from two different supermarket at two different time (one is at night and the other one at late morning). It is proven that the strawberries is indeed fresher and better when purchased in the morning or late morning when the fresh punnets of strawberries is just being put on shelves.


This picture doesnt justify the redness of the strawberries at all. It is really a bright red that is so pretty to look at.

So here is how the chocolate tarts look like





Visually not very pretty as we do not noe how to dig out the tarts perfectly without damaging the tart shell... Taste wise.. i think it taste good except that it is a bit on the heavy side... while the rest of te people except TFB felt that it is a bit too sweet... alright.. next time will not add sugar into the shell anymore..


This is the highlight of the day... Even though initially i was putting all my hopes on the chocolate tarts to be the best bet, surprising this mushroom covered with tuna and cheese remain the best item among all the food that we have prepared. In fact, the chocolate tarts is the least touched by the both of us as it is really too heavy... The taste of the mushroom + tuna + cheese linger on in the mouth you have finished the mushroom and makes you crave for more. I felt that even though the taste was a bit overpowering when i bit in initially, the taste turn very good after a while and before you knew it, the two of us finished all but left two for my bro and sis in law to sample....

I am a veggie freak.. I have to eat some veggie for all meals and when i mean some i dun mean the garnishing on the dishes. So we made a salad to bring along... As i have removed the stems of the mushrooms, i have baked the steams together with cheese and added that onto the salad, plus the mushroom was 'leaking' out some juice so we just poured all the liquid onto the sald. And the salad tasted GOOD!.... I guess we are mushroom and cheese lovers that is why everything with mushroom and cheese tasted good. So mushroom with cheese and the salad ranked first among all the food that we have prepared..

The scones that we have made, is better than the previous batch that i have tried making because it is not that salty anymore. Plus we brought fruit jam to add onto the scones make it the second favourite among the both of us...

So sadly the food that i have predicted to be the number one fav among all of us became the last fav because the cheese was a bit heavy.. shall try to reduce either the cheese or the sugar in the future..

P.S i was surfin the net the other day when i saw another blog that uses mushroom + minced meat + cheese covering the mushroom to be baked too.. So apparently i am not the only one who have such an idea of using mushroom to put some meat inside and cover with cheese to bake... hehe...

English Afternoon tea

So following my three time visit to Tea Cozy, i have fallen in love with the scones there..

Well, i have never had scones before in my life, but that did not stop me from thinking that the scones there really delicious and would be one of the few better ones..

With an obession to make scones and the power of google, i start to browse through pages after pages for scones and english afternoon tea...

From Joy of Baking, i found out that english afternoon tea is something that people have in the late afternoon from 3pm to 5pm. Not to be mistaken as high tea, afternoon tea are usually served in the late afternoon in between light lunch and late lunch with tea and light refreshment while high tea are more like early lunch with more heavy food that includes fishes and meats.

There is no standard menu nor food for afternoon tea even though it would usually consist of scones, sandwiches and most importantly, sandwiches. From the reference that i have read, i guess the type of refreshments prepared really depends on personal preferences and seasonal (if it is applicable).

Even though so, my goal for now is to be able to prepare afternoon tea for two person... I guess it is really not easy for me because other than scones and sandwiches, there should also be cake, pastries and etc for it to be considered as afternoon tea. Out of the many things that i have mentioned, i guess i am only capable of making presentable sandwiches, so i will really have to work harder to learn how to make the others..

First entry

Okay... so since i already have two blogs before this blog.. so i doesnt feel that nervous typing this entry (what am i talking about)... starting a food blog.. has been one of my goal since last year ever since i step into the beautiful and delicious looking world of food blog.... I read thru blog after blog to look at how people bake their stuff.. how they decorate it... and how beautiful their creation looks like... Getting amazed by how good their skills are at combining all basic stuff into a wonder dish...

So here i am starting my own food blog... hopefully it will not be cast aside and will have new entry every now and then...

The reason why i have decide to start my blog now is because i have finally gotten myself a oven... so i can bake stuff.... wahahah!

I am not a very good cooker as i doesnt really cook at all on a daily basis... mayb on a once in a blue moon then i will cook... but it is very simple stuff and nothing fanciful... so i am really just learning how to cook and bake... hopefully... one day.. my creation will look as good as those that i have seen on the food blogs that i go to... ^_^

Currently on my to try list are two things:
